A fall favorite in our house, this sage-butter mushroom sauce pairs perfectly well with the fettuccine. I like to toss the creamy sage-butter mushroom sauce with fresh fettuccine, whenever I can grab hold of some. But the creamy sage-butter mushroom sauce is gratifying with any kind of pasta, fresh or dried.
I have been trying to grow sage in my garden for years now. But the extreme temperatures of our semi-arid region never seem to co-operate with my efforts, until recently. My sage plant has found that perfect spot in the garden where it has been growing happily. And I hope this happiness lasts ever after. For I love sage and I want it to find a permanent home in my garden. Its woodsy, musty scent permeates through my whole garden.
The earthy aroma of fresh sage complements the hearty mushroom sauce with butter, wine and cream. It is so delicious, I could eat it all by itself. But toss it with some fettuccine and you have a satisfying bowl of pasta. No extra grating of cheese required. And you will find yourself going for seconds.

Ingredients | |

5 tablespoons butter | |
½ cup chopped shallots | |
2 garlic cloves, minced | |
1 ¼ cup dry white wine | |
¾ cup heavy whipping cream | |
1 ½ tablespoons fresh sage | |
1 teaspoon salt | |
1 teaspoon pepper | |
16 ounces white button mushrooms or any mushroom of your choice, cleaned and sliced | |
10 ounces fresh or dried fettuccine |
Instructions | |
---|---|
Cook fettuccine in a pot of boiling salted water according to package directions | |
Melt butter in a heavy large skillet over medium-high heat | |
Add shallots and garlic, saute for 1 minute | |
Add mushrooms and saute until soft, about 5 minutes | |
Add salt and pepper | |
Add wine and cream | |
Gently simmer in medium heat until sauce thickens and coats spoon, about 5 minutes | |
Stir in sage | |
Drain fettuccine and add it to the sauce | |
Toss fettuccine with the sauce until heated through and each strand is coated with the creamy sauce | |
Serve hot |
