I am sometimes appalled by the simplicity of this chicken dinner. It is just a matter of having some prosciutto and fontina in the refrigerator and you have a simple yet elegant chicken dinner, fit for any night of the week. Well, fit enough for a busy mom like me. With two boys in three  different sports, most weeknights I find myself either driving them around or cheering for them from the sidelines. Which means, less time at home to cook and eat dinner. Herein comes quick-cooking boneless, skinless chicken breasts. And with the slightest amount of work, a healthy home-cooked dinner is never a distant possibility.

This one takes me back to the days when I was a new mom, and most Friday nights meant staying in. With a newborn in tow, it meant less frequenting my favorite spots, less impromptu dinners out, less of so many things that I used to do before. But it also meant more time at home which in turn paved a way to the stove and the oven. And once I found my way there, I began playing around with food. Homemade pesto has an unmatched quality and zest to it. If you haven’t tried your hand in making it, I think you should. Once you have made it, you’ll have the passport to an effortless weeknight meal. All you need is a food processor, some greens, some nuts, some cheese and you’ll have dinner in a presto. Toss it with a salad, serve it over some grilled fish or meat. Clearly, I haven’t come across a more versatile sauce than a pesto.

Roasted Halibut with Tomatoes and Herbs

Healthy eating does not necessarily imply a mere spiritless consumption of micronutrient rich food. There has to be joy attached to it, and flavor makes eating a joyful experience. Tomatoes, herbs and balsamic vinegar add so much flavor to this healthy and simple roasted halibut that you would want to make and eat it again and again. The halibut cooks directly atop the tomatoes making it an easy one pan dish. I chose Pacific halibut because that’s what I had in my freezer, but you can substitute it with any firm white fish such as cod, mahi-mahi or striped bass. If you don’t have balsamic vinegar, use any vinegar you have on hand. My only request to you is use fresh herbs only, because I feel the herbs add punch to this otherwise unassuming dish. Cooking the fish on high heat and less amount of time lends it a moist and buttery texture.
