Avocado Toast with Poached Eggs

Avocado toast with poached eggs, the perfect food to start off the day, will perhaps go down in history as the millennial food. But for me it will go down as power food that fueled my kids on game days and Saturday mornings. Look at the line-up of ingredients: whole grain bread, avocado, poached eggs, alfalfa, radish sprouts, and flax seeds; all of them are nutrient powerhouses.

This recipe is all about the layers, each layer contributes to the totality of this dish. It is important to build those layers well, starting with the base which is the bread. I prefer to use thick sliced whole grain bread for my avocado toast. I toast it till it is sturdy, golden and crisp. It is the perfect base for the creamy avocados. 

A perfectly ripe avocado that has never been refrigerated is best for any avocado toast. While picking avocados I give them a gentle squeeze, if they yield a tiny bit then I know they are perfect. I like to mash the avocados for my toast, instead of just slicing them. 

The crowning glory of this entire dish is the poached eggs. Follow the instructions below and you’ll end up with perfectly poached eggs every time. For me, a perfect poached egg has a runny yolk and a firm white

My golden moment is when I poke into that egg with a fork and the yolk drips all over the toast. Every mouthful has some of the crisp bread, creamy avocados, egg, fresh microgreens and flax seeds – a delicious way to jump start any day. 

Recipe

Avocado Toast

Ingredients
Box Bullet2 large hass avocados
Box BulletJuice of 1 lime
Box Bullet¼ cup minced onions
Box BulletA few splashes of sriracha
Box Bullet½ teaspoon sea salt 
Box Bullet1 teaspoon pepper
Box Bullet4 slices of whole grain bread 
Box BulletEggs
Box Bullet1 cup of alfalfa and radish sprouts
Box Bullet1 tablespoon flax seed
Box Bullet½ teaspoon sea salt to season the poached eggs
Instructions
Box BulletAdd juice of 1 lime to the minced onions and let it sit for 5 minutes
Box BulletSlice open the avocados lengthwise and remove the seeds
Box BulletUsing a large spoon scoop out the flesh in a bowl
Box BulletAdd onions, lime juice, sriracha, salt and pepper and mash everything with the back of a fork
Box BulletToast the bread till it is golden and crisp
Box BulletSmear each toast with mashed avocados
Box BulletTop them with poached eggs and sprinkle some sea salt 
Box BulletSprinkle alfalfa and radish sprouts, flax seeds on top and serve

Poached Eggs

Ingredients
Box Bullet1 tablespoon white vinegar 
Box BulletEggs
Instructions
Box BulletBring water to boil. The water should be about an inch and half deep
Box BulletAdd a tablespoon of white vinegar 
Box BulletLower heat for the water to just simmer 
Box BulletLightly swirl the water to make a vortex in the middle 
Box BulletCrack an egg without breaking the yolk in a container. I found measurement cups work great here 
Box BulletSlide down the egg in the simmering water and let it cook for 2 minutes
Box BulletStrain out the egg and lay it on a paper towel
Box BulletLightly swirl the water again and cook the next egg. Repeat cooking as many eggs as you want. Don’t worry if the water is a bit murky from the previous eggs. If the water is too messy strain out and discard remnant from previous eggs
