Avocado toast with poached eggs, the perfect food to start off the day, will perhaps go down in history as the millennial food. But for me it will go down as power food that fueled my kids on game days and Saturday mornings. Look at the line-up of ingredients: whole grain bread, avocado, poached eggs, alfalfa, radish sprouts, and flax seeds; all of them are nutrient powerhouses.
This recipe is all about the layers, each layer contributes to the totality of this dish. It is important to build those layers well, starting with the base which is the bread. I prefer to use thick sliced whole grain bread for my avocado toast. I toast it till it is sturdy, golden and crisp. It is the perfect base for the creamy avocados.
A perfectly ripe avocado that has never been refrigerated is best for any avocado toast. While picking avocados I give them a gentle squeeze, if they yield a tiny bit then I know they are perfect. I like to mash the avocados for my toast, instead of just slicing them.
The crowning glory of this entire dish is the poached eggs. Follow the instructions below and you’ll end up with perfectly poached eggs every time. For me, a perfect poached egg has a runny yolk and a firm white
My golden moment is when I poke into that egg with a fork and the yolk drips all over the toast. Every mouthful has some of the crisp bread, creamy avocados, egg, fresh microgreens and flax seeds – a delicious way to jump start any day.

Avocado Toast
Instructions | |

Add juice of 1 lime to the minced onions and let it sit for 5 minutes | |
Slice open the avocados lengthwise and remove the seeds | |
Using a large spoon scoop out the flesh in a bowl | |
Add onions, lime juice, sriracha, salt and pepper and mash everything with the back of a fork | |
Toast the bread till it is golden and crisp | |
Smear each toast with mashed avocados | |
Top them with poached eggs and sprinkle some sea salt | |
Sprinkle alfalfa and radish sprouts, flax seeds on top and serve |
Poached Eggs
Ingredients | |

1 tablespoon white vinegar | |
Eggs |
Instructions | |
---|---|
Bring water to boil. The water should be about an inch and half deep | |
Add a tablespoon of white vinegar | |
Lower heat for the water to just simmer | |
Lightly swirl the water to make a vortex in the middle | |
Crack an egg without breaking the yolk in a container. I found measurement cups work great here | |
Slide down the egg in the simmering water and let it cook for 2 minutes | |
Strain out the egg and lay it on a paper towel | |
Lightly swirl the water again and cook the next egg. Repeat cooking as many eggs as you want. Don’t worry if the water is a bit murky from the previous eggs. If the water is too messy strain out and discard remnant from previous eggs |
