German Pancake with Brown Sugar Apple Topping

German pancakes have a dramatic presence. When they are baked, their edges puff up to form a tall crispy rim while the base remains flat and tender, almost custardy. I like to think of them as giant popovers with pomp and a whole lot of histrionics. Because every time they see the insides of an oven they balloon up. They form what looks like some kind of geographical structure, presenting itself with a unique character every time you bake.

These pancakes got impressive looks but actually are a cinch to whip up. Simply blend or stir together flour, eggs, and milk, pour into a hot skillet and bake. You can enjoy them with syrup, a dusting of powdered sugar and any kind of fruit topping.

This pancake here has cinnamon in the batter, and warm brown sugar apple topping. Dust it off with powdered sugar, and you have a perfect breakfast treat on a lazy Sunday morning.

Box Bullet1 ½ cups milk 
Box Bullet6 eggs
Box Bullet1 teaspoon vanilla extract 
Box Bullet1 ⅓ cups all-purpose flour
Box Bullet½ teaspoon salt
Box Bullet¼ teaspoon ground cinnamon
Box Bullet2 tablespoons sugar
Box Bullet4 tablespoons butter
Apple Topping
Box Bullet3 apples, peeled, cored and cut into ½ inch thick wedges
Box Bullet2 tablespoons butter
Box Bullet2 tablespoons water
Box Bullet¼ cup brown sugar
Box Bullet¼ teaspoon salt

Instructions

Pancake
Box BulletPreheat oven to 375 degree F
Box BulletPut eggs, milk and vanilla in a blender and blend
Box BulletAdd flour, cinnamon, sugar, salt and blend until everything is combined into a smooth batter
Box BulletMelt butter in a 12 inch cast iron skillet over medium heat
Box BulletAdd batter to the skillet
Box BulletTransfer the skillet to the oven 
Box BulletBake for 30 minutes, until edges are deep golden brown and center is beginning to brown

Note: To stir by hand, whisk flour, cinnamon, sugar and salt in a bowl. Whisk milk, eggs, and vanilla in a separate bowl. Whisk in the wet ingredients into the dry and mix it into a smooth batter.

Box BulletCook the apples over medium heat, stirring occasionally until apples are translucent and just tender and a thick sauce forms; should take about 5 minutes
