I call them my happy stack. These light and fluffy pancakes have adorned so many birthday mornings of my boys. Especially when they were toddlers, when stacking up Legos was their primary occupation in life. A tall fluffy stack of pancakes on birthday mornings would elicit shrieks of delight from my little toddlers. I miss toddlerhood in my life, I really do.
While toddlerhood days are bygone, these pancakes are here to stay in our lives. For birthday mornings I still make these. It is a happy stack of deliciousness!! Funny how some common ingredients come together and fill up special moments of our lives. I guess that will teach my boys to find joy and pleasure in the simplest things in life.

1 ½ cups all purpose flour | |
2 tablespoon sugar | |
1 tablespoon baking powder | |
½ teaspoon salt | |
1 ¼ cups milk | |
4 tablespoon melted butter plus some more to cook the pancakes | |
2 eggs | |
1 teaspoon vanilla |
Instructions | |

Whisk eggs, milk and vanilla in a medium bowl | |
Stir together the flour, sugar, baking powder and salt in another medium bowl | |
Pour the wet mixture into the dry | |
Add the melted butter | |
Mix until just combined. Do not over-mix, it will lead to flat and tough pancakes. You may see tiny lumps, but that’s just fine | |
Heat a griddle or a 12-inch nonstick skillet to medium heat | |
Brush with butter | |
Pour about ¼ cup of batter per pancake onto a hot griddle, spread if necessary to make 4 inch rounds. I prefer to use an ice-cream scoop. You should be able to fit four of those at once | |
Cook pancakes until bubbles appear on surface, edges are set, and undersides are golden, 45 seconds to 1 minute | |
Flip pancakes with a spatula and cook until undersides are golden and pancakes are cooked through, 45 seconds to 1 minute. Lower the heat if pancakes brown too quickly before insides are cooked through | |
Transfer pancakes to plates and serve with butter and maple syrup | |
Brush griddle with more butter between batches | |
You should get 9 or 10 pancakes out of this batter |
Note: These pancakes are best eaten hot from the skillet. But if you want to sit down together, you can keep the first batches warm on a baking sheet in a 200 degrees F oven until all the pancakes are cooked.
